I’m a Food Service Establishment – What’s Expected of me?

As a FSE (Food Service Establishment) you have a legal obligation to demonstrate compliance with Irish Water standards for waste water. These requirements are detailed below. In the previous blog, we discussed two important licensing requirements for all types of grease traps. However, to be completely compliant with local regulations, there are four other requirements that need to be met.

The third is Monitoring.

The inside of the trap should be monitiored frequently to comply with the 25% rule. These guidelines state that “the trap shall be emptied when 25% of the total capacity of the trap is occupied by FOG (Fats, OIls and Grease). Records should be documented and retained for later inspection by Local Authorities. Taylormade.ie will provide this service as part of a SLA (Service Level Agreement).

Fourth, is Waste Water Analysis.

Waste water analysis records provide Local Authority Inspectors with accurate performance results for the grease trapping equipment on the premises. This requires:

  • installing a tap on the outet side of the grease trap to catch water samples and/or
  • collect water sample from the outlet baffle inside the grease trap

Water analysis must be carried out by approved and permitted laboratories. Taylormade.ie provide this service as part of a SLA (Service Level Agreement).

Fifth, is Compliance Reporting.

All monitoring and maintenance records must be legible, up to date and retained on site for Local Authority Inspectors to examine. And finally, Trade Effluent Discharge Licence.

It is a legal requirement for all FSE’s to apply for (and renew annually) their Discharge to Sewer Licence. You can do this by logging on to www.water.ie/for-business/trade-effluent/
